SEAFOOD & CHORIZO SOUP

So I've been craving a seafood soup with CHORIZO!
I love chorizo and I love seafood!
I had crab, jumbo shrimp and some salmon in my freezer
and I found some YUMMY YUMMY chorizo at the store the
other day so I decided to improvise! ;)


VOILA!




1. This is for the homemade a-la-ME stock!
Shrimp shells
Crab
2 Tomatoes cut in quarters
1 Onion cut in quarters
2 Stalks of Celery cut in med. sized chunks
and any fresh seasonings you might like
Cilantro and such
Add your salt, pepper, and other seasonings here :D
I boiled that for a good 30 min.


oh yeah I almost forgot!!
I added Orange peel and lemon zest :D

I cut some baguettes lengthwise and added some
lemon garlic spread :D then i put it in the broiler
until everything melted and was nice and toast-like







I fried up some chorizo in a non stick pan
(no oil needed since the chorizo itself throws off fat)







Then drained off the stock into a new pot.
The crab legs were at the bottom so that when the stock was
being drained it would start cooking. Then i folded in my
shrimp and salmon ;)









Then i decided to add some yummy mushrooms
because mushrooms rock!






TADA!
It was DELISH!!

When you serve it add a peice of the toasted garlic bread
on the bottom then serve your soup on top!
The garlic spreads out throught the soup and gives it a little
extra something! ;)

WELCOME BACK HUNGRY

I've had a blog before. That was then this is now.
Now I'm hungry and I'm here to tell you all about it.
ENJOY!

I cant make lasagna. I could if they sold that pre-baked lasagna strips here but they don't
and somehow I can never cook them properly and if I do then they tear. So I invented a whole new FAKE-BAKE-LASAGNA. Since it was a hit with my husband I decided to post the steps for anyone else that can't make lasagna.
YUMMERS!


1. Cut 1/2 an onion & 2 garlic cloves.








2. Heat olive oil in a pan and then add the onion. Cook until translucent.







3. Add the garlic. Cook for a 1 more min.







4. Add your ground meat.








These are my seasonings. Add whatever you like most.






5. Remove the fat.







6. Add two cans of tomatoes. Water and all.








7. Add your seasoning.






9. Cook covered for 20 min on medium low heat.








I like to have a garbage bowl like Rachel Ray :P







10. Heat the pasta water and salt it.







11. Butter your lasagna over proof pan.







12. Cook your pasta at your desired tenderness.

13. Drain your pasta.







14. Put a layer of your pasta in the oven proof bowl
and add some ricotta.

15. Add some shredded mozzarella.

16. Add a layer of your cooked beef.







17. Add another layer of pasta and then some more shredded mozzarella.







18. Bake it for a few minutes so the layers of cheese will melt.
(350 degrees)
